Mexican Baked Beans

One 16 oz. can S&W brand Pinquito beans, undrained*
12 oz. Chachies Mild, Medium or Finely Chopped Salsa
8 oz. shredded Jack cheese

Mix together in a casserole dish, bake in preheated 350 degree F oven for 20 minutes. Remove from oven, cover with cheese, and return to oven for 10 more minutes.

This side dish is great with rice as a meatless entrèe. It's also a good substitute for traditional baked beans.

* If Pinquito beans are unavailable in your area, ask your grocer, or substitute pinto beans mixed with a small amount of crushed pepper, garlic powder, cumin and onion powder.
