Chicken Quesadillas
Served 4
4 chicken breasts, boned and skinned
4 large flour tortillas
8 oz. shredded Jack or Cheddar cheese
16 oz. Chachies Salsa (any variety)
Cook chicken to taste (roast, sauté in a little olive oil, etc.) Cut into strips and place on tortilla. Top with cheese, cover with a second tortilla then heat briefly to melt. Cut in half, top generously with Chachies Salsa and serve.
