Chicken Carmelita (low fat)
4 chicken breasts, boned and skinned
2 cups cooked white rice
1 16oz. can black beans
16 oz. Chachies Salsa (any variety)
Sauté chicken in non-stick skillet until tender, turning once (about 10 minutes). Add rice around chicken. Spoon beans evenly on rice. Put a spoonful of Chachies Salsa on each breast and remainder on rice mixture. Cover and cook until rice mixture is heated through.
Serve with the rest of the salsa as a garnish.
